FAQ

I’ve never bought beef directly from a pharmer before, what is the process?

We raise the cattle to about 2 years of age, or about 800-1000 lbs. The cattle are raised on our grass pastures throughout the treasure valley and finished with grain. We deliver the animal to the selected butcher for processing. You can purchase 1/4, 1/2, or a whole cow and select the cuts of meat that you’d like. Once processed, we are happy to deliver it within the Treasure Valley.

What does 1/4, 1/2, or a whole cow translate to?

1/4 = about 125-175pounds hang weight

1/2 = about 250-350 pounds hang weight

whole beef= about 550-700 pounds hang weight

Market price is per pound, packaged, delivered and ready for your freezer.

Do I need to reserve a cow? If so, how far in advance?

We highly recommend reserving a cow so that we can plan accordingly. From time to time, we have unclaimed meat which can be purchased. Reach out to Sam for more information 208-869-2022 or contact us through our contact page.

Why does the meat I received not add up to the hanging weight (hanging weight vs boxed weight)?

Hanging weight is the weight of the carcass after it has been butchered and in cooler for aging; this means carcass without hide, head, hooves, innards but still with bones and connective tissue.

Boxed or cut weight is the final weight of the meat once it has been cut and packaged at the butcher. The weight is usually less by about 25% of the hanging weight as carcass loses moisture in addition to hide, etc. Things like more boneless cuts, less surface fat left on the cuts, and leaner ground beef requested by customer can all reduce the boxed weight but doesn’t reduce the amount of meat.
